HAM & SPINACH MUFFINS

Breakfast muffins are the best invention for busy mornings. Pop a muffin in the microwave for 15 seconds and then take it to go!
2 cup | All-purpose Flour |
½ cup | Parmesan Cheese |
1 Tbsp | Baking Powder |
½ tsp | Salt |
¼ tsp | Pepper |
1 cup | Skim Milk |
3 | Eggs |
¾ cup | Low-fat Cottage Cheese |
¼ cup. stick | Butter, melted |
¾ cup | Diced Smoked Ham |
1 | Large Onion, chopped finely |
⅓ cup | Spinach |
DIRECTIONS:
Preheat oven to 400 degrees and line muffin pan with paper muffin cups. In a large bowl combine dry ingredients (flour, Parmesan, baking powder, salt, and pepper) mixing until blended. In another bowl whisk wet ingredients together (milk, eggs, cottage cheese, and butter). Stir wet ingredients into dry ingredients until combined then fold in ham, onion, and spinach. Divide batter evenly among muffin cups and cook for 25 minutes. Let cool for 5 minutes and serve.

SPINACH & CHEDDAR MUFFINS

Treat yourself to a healthy and hearty dish. This spinach cheddar muffin recipe is perfect as either side or a delicious breakfast.
2 cups | All-purpose Flour |
2 cups | Fresh Baby Spinach |
1 | Egg |
1 cup | 2% Milk |
6 Tbsp | Butter, melted |
2 tsp | Baking Powder |
½ tsp | Baking Soda |
1 cup | Cheddar Cheese, cubed |
½ tsp | Kosher Salt |
DIRECTIONS:
Preheat oven to 350 °F. Line a muffin tin with nonstick liners.
In a large bowl mix the flour, baking powder, baking soda, and salt.
In another large bowl, mix the spinach, egg, milk, butter, and cheddar cheese.
Slowly pour the wet ingredients into the flour mixture and combine well.
Evenly distribute the batter into the muffin tin cups.
Bake for 30-35 minutes.
