While K has been mostly keen on sweets this week she gave a slow-cooker meal a try.
Creamy Chicken Chili
2 or 3 chicken breast
1/2 cup of instant potato flakes--garlic or loaded potato flavors work best
2 cans of northern white beans
1 sweet red pepper chopped
3 spinach leaves chopped
1/2 teaspoon black pepper
3 cups of chicken stock
Cooking Directions
Put the chicken breast in the slow-cooker with 1 cup of the chicken stock. Cook on high for 3 hours.
After its been cooked, drain out stock into separate bowl, pull chicken a part in another bowl, take the stock bowl and mix in the instant potato flakes, like a rue.
Then put all the remaining ingredients back into the slow-cooker on low for 2 more hours--

Very nice--seems like its not a real spicy chili that's the way my kids like it--I might add a sprinkle of cumin for myself =)
