A Great Summertime treat @Verisoda

We all know soda is a treat that everyone enjoys, but we also know that most varieties of it aren't very good for you. Whether it’s regular soda that’s loaded with sugar, or diet drinks with the increasing evidence that they might be just as bad for you as the regular stuff, you just don't know what to trust! I was thrilled to be asked to sample the Veri brand, because with my kids the "I WANT A SODA" is hard to ignore all summer. I love that I have a healthier option to offer them.

First thing while getting the mom's party set up with me I hear my daughter say "WOW really fun designs" I must agree each flavor has it's own unique shape and color on the bottle. A Very RETRO look I love.

I have to admit I grow up with "real" mashed taters...while my hubby grew up on Betty Crocker Instant.
When we got married and I was working two  jobs  we took turns making dinner and he made Bettys spuds- I was hooked!! I love all the verities that are out now--the loaded mashed is my favoriate.

Grands! Chicken-Bacon Quesadillas from Pillsbury

These look so delish--putting them on the dinner menu this week!!!

Grands! Chicken-Bacon Quesadillas from Pillsbury -- Pillsbury Grands! refrigerated biscuits are used as a flaky, tasty replacement for tortillas in these chicken quesadilla appetizers that are cooked on a contact grill.


 INGREDIENTS: 1 container (8 oz) sour cream
 4 green onions, thinly sliced (4 tablespoons) 
 1 package (1 oz) ranch dip mix
 1 cup chunky-style salsa
 1/4 cup Smucker's® Peach Preserves
 3 tablespoons chopped fresh cilantro
 1/4 lb sliced roasted chicken (from deli), chopped
 3/4 cup shredded Mexican cheese blend or crumbled queso blanco cheese (3 oz)
 8 slices precooked bacon, chopped 1 can (16.3 oz) 
Pillsbury Grands! Homestyle refrigerated buttermilk biscuits (8 biscuits)



DIRECTIONS:
In small bowl, mix sour cream, 1 sliced green onion and 1 tablespoon of the ranch dip mix. In another small bowl, mix salsa, preserves and 1 tablespoon of the cilantro.

Heat closed medium-size contact grill for 5 minutes; spray grill plates with Crisco® Original No-Stick Cooking Spray. Meanwhile, in medium bowl, mix chicken, cheese, bacon and remaining green onions, cilantro and ranch dip mix.

Separate dough into 8 biscuits; press or roll each into 5-inch round. Place 1/4 cup chicken mixture on one side of each biscuit round. Fold biscuit over filling; press edges to seal.

Place biscuits, two at a time, on grill; close grill. Cook 2 to 3 minutes or until golden brown. Cut each quesadilla into 3 wedges. Serve with sour cream and salsa mixtures.

Cork section offers place to post pictures, appointments and put those game or concert tickets for safe keeping.

I like the notes section... If I need to make a quick note it's there. I used to use notebook paper but I would move it and  forget where I put my note. The dry erase board is stationary and can't be misplaced. So now with the erase board I rarely forget things -unless I don't write it down.

The cork section is by far my favorite part to this planning system. I've added a envelope to store documents ---like school supply list, permission slips for camp etc.

RAINBOW COOKIES #FoodtasticFriday!

A while back I received an e-mail from Pillsbury with these lovely Rainbow Sugar Cookies-- my daughter being the lil baker was begging to make them!! They are a great  fun treat for any summer picnic!! 

They looks super cute and pretty EZ to make--off to the store to buy the cookie dough

 and away went Kayleigh in the kitchen!--

1. one or two rolls of  refrigerated cookie dough
2. box classic gel food colors
3.  1 cup of flour
4. 1/2 cup sparkling sugar or turbinado sugar

Heat oven to 350°F.

Divide dough into 5 equal parts. Tint each with a different gel food color--

 add 2 tablespoons of the flour to each to keep from becoming overly sticky-VERY IMPORTANT!!!!!!!!!!!!!!!!!!!!!!!!!

On work surface, place 2 pieces cooking parchment paper. Sprinkle a bit of the remaining flour onto 1 of the pieces of parchment paper. Use rolling pin to roll red dough to 8x3x1/4 inch. Transfer this dough to other piece of parchment paper. Repeat with orange, yellow, green and blue pieces of dough, placing each color on top of the other until they are all stacked in rainbow order--red, orange, yellow, green, blue. THIS PART WAS A LITTLE TRICKY!!

Use sharp knife to cut edges of dough to even out rectangle.

 Starting at long side of dough, roll up.

Sprinkle parchment paper with sparkling sugar. Roll dough gently in sugar until 

coated. Cut into 1/2-inch slices with sharp knife, then press one side of each 

round into sparkling sugar. Place on ungreased cookie sheet, sugar side up.

Bake 7 to 10 minutes or just until set. Cool slightly before removing to cooling 

rack.

~*~~*~~*~ALL DONE !!!!!!~~*~~*~~*~

~~the extra ends of dough  from step 4 we sort of smoosh down and they looked like tye dyed cookies-NO WASTE =^D ~~
