Some food Fun for the 4th of July #foodie #foodporn



What's a 4th of July BBQ & firework viewing  without some great side dishes---There are TONS of recipes all over the web weeks before and they all look so good. I could be cooking for the whole week but I've decided on a few I know our family will really enjoy! Being the gal who has to put her own spin on almost everything each recipe has a my own twist.


Love cheesecake? Pressed for time or feel like you are a baking-dummy, this recipe is for you. It requires so few ingredients and bakes up in just 20 minutes.






Ingredients:
2 8-ounce packs of cream cheese, softened
2 large eggs
1 cup of sugar
1 tsp pure vanilla or almond extract
12 vanilla wafers
Fresh fruit or topping of your choice


To make:
Heat oven to 350 degrees. Line muffin tins with 12 paper cups and place one vanilla wafer in the bottom of each cup. Blend cream cheese with a hand mixer until fluffy. Add sugar and beat until mixed. Add eggs, one at a time until well incorporated and then vanilla extract. Fill each cup with cheesecake mixture. Bake for 20 minutes and let sit out on a cooling rack in the muffin pan for about 20-30 minutes. Transfer pans in to refrigerator and chill for a minimum of 2 hours. Overnight is best.



 My first though was to replace the paper liners with graham cracker crumb crust and top with  Blueberries & Strawberry's  but my daughter's not the biggest fan of  Blueberries, suggested blue mini M's---well WHO doesn't love Strawberries and CHOCOLATE!!!






For a treat while watching fireworks we  munch on marshmallows and gummies along with my twist on this treat I found on pinterest.

We have found a few simple recipes using Puffins that will have your  family regularly whipping up delicious and healthy breakfasts.

 Bake up a batch of Apple Honey Puffins Muffins over the weekend, for an easy grab-and-go breakfast option you can enjoy all week long. This is a great recipe to get the whole family in the kitchen!











INGREDIENT 

1 egg

1/4 cup of olive oil

1/2 cup of unsweetened milk

1/4 cup of Honey

1 cup spelt flour 

1/4 cup pack brown sugar

3 tsp baking powder

1 tsp salt

1/4 tsp cinnamon

2 cups crushed Honey Rice Puffin cereal

1 medium apple shredded

DIRECTIONS

Beat egg

Combine oil, milk, and honey in bowl , then add egg mix well

In large bowl combine dry  ingredient then add wet stir until flour is just moist, fold in 

shredded apple.

Cook for 15/20 minutes at 425


Another way to add them to  your mornings with Puffin Crusted French Toast – crushed up Peanut Butter Puffins make the perfect lower-sugar coating for your favorite French toast recipe! <------ my personal favorite =)

Celebratin National #LasagnaDay with @explorecuisine #foodie #foodporn #recipe



  One thing I have learned so much about since I've started blogging is there is a National Food Day  every single day of the year; including many foods we know and love-Pizza, Ice-Cream Lasagna  & some odd ones Molasses Bar Day and  Mincemeat Pie Day
 Thanks to the internet these have become so much easier for us to celebrate. National Lasagna Day coming up this Friday, July 29th rather then hit your favorite pasta restaurant try this healthier version at home. Explore Cuisine products are all vegan, gluten-free, non-GMO and made from organic ingredients. This recipe for Green Lentil Vegetable Lasagne from Explore Cuisine is perfect for celebrating this food holiday! With no-boil lasagna sheets, making this classic Italian dish is easier than ever.







Green Lentil Vegetable Lasagna for Two

Ingredients 
  • 5 sheets green lentil lasagne cooked 6 minutes, drained
  • 1 Japanese eggplant sliced thin lengthwise
  • 1 red bell pepper sliced into oblongs
  • olive oil
  • salt and pepper
  • 2 oz Mozzarella
  • 1/2 cup bechamel sauce
Preparation
  1. Lightly coat the vegetables with olive oil. Season with salt and pepper. Roast on a baking sheet until tender. Turn down the oven to 325°F.
  2. Lasagne 2 oz. Mozzarella, shredded 1/2 c. béchamel sauce olive oil
  3. In a baking dish the approximate size of lasagne sheets – brush the dish with a small amount of olive oil. Place one sheet of lasagne on the bottom. Layer with vegetables, mozzarella, béchamel and lasagna sheets. Repeat. Top with last lasagna sheet with béchamel. Bake at 325°F until heated through.

Easy Recipe-- Mini Cheesecakes
