FUN AND TASTY WAYS TO USE A MUFFIN TIN FOR BREAKFAST #recipes #foodie

Always in a rush in the morning-NO TIME for breakfast... Check out these easy grab & go breakfast featured on Better Recipes. Make a batch of these on a Sunday afternoon and your set for a few mornings.

HAM & SPINACH MUFFINS

Ham And Spinach Muffins



Breakfast muffins are the best invention for busy mornings.  Pop a muffin in the microwave for 15 seconds and then take it to go! 







  
2 cupAll-purpose Flour
½ cupParmesan Cheese
1 TbspBaking Powder
½ tspSalt
¼ tspPepper
1 cupSkim Milk
3Eggs
¾ cupLow-fat Cottage Cheese
¼ cup. stickButter, melted
¾ cupDiced Smoked Ham
1Large Onion, chopped finely
⅓ cupSpinach
DIRECTIONS:
Preheat oven to 400 degrees and line muffin pan with paper muffin cups. In a large bowl combine dry ingredients (flour, Parmesan, baking powder, salt, and pepper) mixing until blended. In another bowl whisk wet ingredients together (milk, eggs, cottage cheese, and butter). Stir wet ingredients into dry ingredients until combined then fold in ham, onion, and spinach. Divide batter evenly among muffin cups and cook for 25 minutes. Let cool for 5 minutes and serve.

SPINACH & CHEDDAR MUFFINS

Spinach & Cheddar Muffins

Treat yourself to a healthy and hearty dish. This spinach cheddar muffin recipe is perfect as either side or a delicious breakfast.
2 cupsAll-purpose Flour
2 cupsFresh Baby Spinach
1Egg
1 cup2% Milk
6 TbspButter, melted
2 tspBaking Powder
½ tspBaking Soda
1 cupCheddar Cheese, cubed
½ tspKosher Salt
DIRECTIONS:
Preheat oven to 350 °F. Line a muffin tin with nonstick liners.
In a large bowl mix the flour, baking powder, baking soda, and salt.
In another large bowl, mix the spinach, egg, milk, butter, and cheddar cheese.
Slowly pour the wet ingredients into the flour mixture and combine well.
Evenly distribute the batter into the muffin tin cups.
Bake for 30-35 minutes.

    Healthy Pasta Recipes Happy National Spaghetti Day #foodie #ad

    With the New Year many of us have set goals to eat/live healthier lives.With days & days of National "____" Day-and it's ALWAYS some YUMMY food we salutations  to celebrate with out the guilt.

    January 4th is National Spaghetti Day! With delicious spaghetti made from chickpeas, lentils, black beans, edamame and more.

    Ingredients for 2-4 people
    Instructions
    1. Cook the spaghetti until soft according to the packet directions.
    2. Drain the water from the pasta, and stir in the pasta sauce. Add more if you like more sauce.
    3. Serve in bowls and then sprinkle the nutritional yeast on each one.
    4. Season with salt and extra nutritional yeast if desired.

    Ingredients for 4 people
    • 1 package Explore Cuisine Black Bean Spaghetti – cooked, drained
    • 2 large heirloom tomatoes– seeded, chopped
    • 2 ½ T. olive oil, divided
    • 2 garlic cloves minced
    • 5 basil leaves, cut into ribbons
    • salt and red pepper flakes to taste
    Instructions
    1. Gently combine tomatoes with ½ T. olive oil, garlic, basil, and salt, and red pepper flakes.
    2. Toss spaghetti with 2 T. olive oil.
    3. Top with heirloom tomato mixture.
