It's summer and I'm still obsessed with making my own popsicles. But this time? I'm not sharing with the kids. These delicious 3 ingredient Piña Colada Popsicles are perfect for the adults, not just the kids!

Anyhow, it's extra simple, just three ingredients.
  • Take one pineapple.  Peel it, core it and puree it, then put it in a big bowl.
  • Take about one cup of shredded coconut, add it to the pineapple.
  • Now take one container of Liberté Méditerranée Coconut Yogurt, add it to your bowl.
  • Mix well till it's all blended, make sure there is no white yogurt parts left.
  • Pour into popsicle molds and freeze.  (Whatever is left in the bowl, just eat with a spoon

These bars are fabulous! I had one with some strawberries for breakfast the other morning because I just didn't feel very hungry for a big meal. I knew I needed to eat something to start my day off right, and these were the perfect answer. They are just the right size for a side with breakfast, or a snack on the go. And the best part is they are even good for you too! I like how the berry part actually tastes like real fruit, unlike some bars that taste like a flavored sugary jelly. The other great part is they can be slipped into your bag on the way out the door and eaten on the run without any mess. Small and simple, yet full of satisfaction!

Hosting a World Cup Party? #Recipes that are sure to be winners





After winning a nail biter against Ghana on Monday, the USA is a serious World Cup contender! Invite over your friends to cheer on our guys on Sunday, when they take on Portugal - and serve up these  delicious recipes that are sure to keep your crowd happy. And ladies if you cannot seem to get into the World Cup-read all the way to the bottom of this post-might find a few reasons to check in on the game from now and then. =D



Chili Coconut Shrimp
 frozen raw jumbo shrimp, peeled
1/4 cup cornstarch or all purpose flour
1/4 tsp salt
3/4 cup Thai sweet chili sauce
2 tbsp rice vinegar
1 cup unsweetened medium desiccated coconut, toasted



  • Preheat oven to 400F. Line a large rimmed baking sheet with foil and lightly spray with oil. Thaw shrimp following package directions. Pat dry with paper towels. Stir cornstarch with salt and pepper in a shallow dish. In a small bowl, stir 1/2 cup chili sauce with vinegar. In another shallow dish, spread out coconut. Toss shrimp in cornstarch mixture. Then, shaking off excess starch, dip each in chili-sauce mixture and coat with coconut. Place shrimp on foil.
  • Bake in centre of oven until shrimp is cooked through, about 10 min. Serve remaining sweet chili sauce alongside as a dipping sauce.

Roasted Cherry and Brie Pizza
3 tablespoons garlic olive oil
Brie cheese, 8-10 slices
1 cup fresh cherries, pitted and halved
3/4 cup mozzarella, shredded (or 5-6 rounds of thinly sliced fresh mozzarella)
1 1/2 tablespoons fresh rosemary, chopped
1/2 yellow onion, thinly sliced
2 tablespoons butter
1/4 cup balsamic vinegar
1 lb. whole wheat pizza dough
Directions
Preheat oven to 450 (with the pizza stone inside, if you have one).
Meanwhile, melt butter in a skillet and add onions. Cook on low for about 20 minutes, stirring occasionally. Onions should be a deep brown but not crispy when finished.
Simmer balsamic on medium heat for 3-4 minutes until it is a syrup consistency. Set aside.
Brush garlic olive oil over dough on pizza stone and bake 5 minutes. Remove from oven and lay the mozzarella and brie over the dough. Pile on cherries and caramelized onions and sprinkle with fresh rosemary. Drizzle with balsamic reduction. Bake 15-20 minutes.
Remove from the oven and garnish with extra rosemary.



 Juicy pulled pork sliders
  • 2 medium yellow onions, thinly sliced
  • 4 medium garlic cloves, thinly sliced
  • 1 cup chicken stock or low-sodium chicken broth
  • 1 tablespoon packed dark brown sugar
  • 1 tablespoon chili powder
  • 1 tablespoon kosher salt, plus more as needed
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground cinnamon
  • 1 (4-1/2- to 5-pound) boneless or bone-in pork shoulder (also known as pork butt), twine or netting removed
  • 2 cups barbecue sauce (optional)
Place the onions and garlic in an even layer in the slow cooker and pour in the stock or broth. Combine the sugar, chili powder, measured salt, cumin, and cinnamon in a small bowl. Pat the pork dry with paper towels. Rub the spice mixture all over the pork and place the meat on top of the onions and garlic. Cover and cook until the pork is fork tender, about 6 to 8 hours on high or 8 to 10 hours on low.
Turn off the slow cooker and remove the pork to a cutting board. Set a fine-mesh strainer over a medium heatproof bowl. Pour the onion mixture from the slow cooker through the strainer and return the solids to the slow cooker. Set the strained liquid aside.
If the pork has a bone, remove and discard it. Using 2 forks, shred the meat into bite-sized pieces, discarding any large pieces of fat. Return the shredded meat to the slow cooker, add the barbecue sauce, if using, and mix to combine. If you’re not using barbecue sauce, use a spoon to skim and discard the fat from the surface of the strained cooking liquid, and then add 1/4 cup of the liquid at a time to the slow cooker until the pork is just moistened. Taste and season with salt as needed. Add a slaw topping for a delish slider.

Keeping the Portuguese off the scoreboard will be difficult, as they boast one of the world’s best, and most arrogant, strikers. Cristiano Ronaldo, Among several of his preferred celebrations, Ronaldo enjoys taking off his shirt and flexing for the cameras after he scores a goal. One of the keys to success for the USA team on Sunday is to ensure that Ronaldo remains fully clothed throughout the match...although I can live with one goal.

Easy Crock Pot BBQ Ribs





Want to bring the dish that will bie the BIGGEST hit at the next family party--make these ribs!!!



Easy Crock Pot BBQ Ribs


Ingredients
  • 4 pounds pork baby back ribs
  • salt and pepper
  • garlic powder, onion powder (1/2 tsp each)
  • 2 cups of your favorite BBQ sauce
  • 1 cup ketchup
  • 1/2 cup packed brown sugar

Directions:
  1. Preheat oven to 400 degrees.
  2. Place ribs in baking dish and season with salt, pepper, garlic and onion powder. 
  3. Bake for 15 minutes and then turn over and bake for 15 more minutes.
  4. In a small bowl combine BBQ sauce, ketchup and brown sugar. 
  5. Place ribs in a large Crock Pot (or slow cooker). You can also use a liner if you want like I did for less mess. You can either cut or curl the ribs. 
  6. Pour the sauce on top and cook on low for 6-8 hours.
  7. If you want to caramelize the sauce, put the ribs back into the oven for 15 minutes at 400 degrees.
